Se busca preservar la calidad de los productos pesqueros capturados. Por un lado a bordo, disminuyendo la manipulación de los mismos y aportando valor añadido con nuevas tecnologías de procesado y elaboración, y por otro lado en tierra, innovando en los procesos de conservación de forma que sea posible la elaboración y procesado tras la congelación. Se propone investigar y desarrollar tecnologías innovadoras de procesado a bordo, y de elaborado y conservación en tierra, estableciendo así 4 actividades a desarrollar:ACTIVIDAD 1: DESARROLLO DE UN SISTEMA INNOVADOR PARA LA CLASIFICACIÓN DE CALAMAR A BORDO.ACTIVIDAD 2: DISEÑO Y VALIDACIÓN DE FILETEADORA PARA PESCADO DE PEQUEÑO TAMAÑO.ACTIVIDAD 3: INNOVACIÓN DE PROCESADO DE MERLUZA Y LANGOSTINO AUSTRAL EN TIERRA.ACTIVIDAD 4: DESARROLLO DE MÁQUINA EVISCERADORA DE GALLO PARA FLOTA DE FRESCO.Este proyecto pretende preservar la calidad, aumentar la seguridad alimentaria al disminuir la degradación del pescado debido a los procesos de manipulación y procesado, así como a la utilización de metodologías de conservación adecuadas.El proyecto se realiza casi al 100% en la comunidad autónoma de GaliciaPuede acceder a más información en la página del proyecto."
